This dish is one of my FAVORITE dishes my hubby makes. Okay, perhaps I am a little biased but, you should see for yourself how amazing this dish is. I do love my babe's cooking, he is very talented and he loves what he does. Cooking for 11 years and learning most of his techniques from his grandmothers, as well as, school, he truly puts his heart and soul into the food he makes whether it be for his family or his guests.
This dish is a light but fulfilling meal. You can make it just for you or for the family. You've got veal scapollini, which means pounded thin, artichokes, tomatoes, pine nuts, and asparagus resting on a bed of mascarpone polenta finished with a white wine butter sauce.
