Beach Style

Summer time is finally here and lucky for me I live in Florida which means on my days off I'm hitting the beach! I got myself a new bathing suit from Victoria Secret and I plan on getting a couple more from some different places this summer. My sunglasses are Tory Burch and they are my favorite because they are polarized, they look so cute and go with every outfit! TKEE's  flip flops, these are one of my favorites because they come in all different kinds of colors and styles!

Usually when I hit the beach I just throw on a pair of shorts, shirt or tank top, doesn't really matter anyway because I spend the majority of the time in my bathing suit! :)

Here's to summertime!!!

Cauliflower Breasticks

We all have that one food that we want so bad when we are trying to eat healthy. For me it's pizza and breadsticks. More pizza but breadsticks are also delicious, plus they go great with pizza. It is so hard for me to avoid when I am doing my low carb diet, however, with using Cauliflower as a substitution for bread, it is possible to be able to indulge in the things I want but with sticking to my diet.

Here is the recipe that I use to make my breadsticks and pizzas:

Rice a whole head of cauliflower, either using a food processor or cheese grater. Food processor is MUCH easier. :)

Put riced cauliflower into bowl and put in microwave for about 8 minutes. Let cool in freezer or fridge for about 5-10 minutes. Then place into kitchen towel and squeeze out juice until the cauliflower looks more like dough. Should yield about 1 cup or less.

Place into a bowl with 1 Egg, 1 TBSP Olive Oil, 1/2 cup mozzarella cheese, 1 tsp salt and 1 tsp pepper, 1 TBSP of oregano and 1 tsp of garlic salt. 1 tsp of baking powder.

Mix together with your hands, then spread onto sheet pan. Be sure to oil up pan before putting "dough" onto it.

Bake for 15 minutes at 400 degrees. Check and see if done, add more time if need be. About 2 minutes before times up add some mozzarella cheese on top.

After baking and letting cauliflower breadsticks cool down, cut into squares or rectangles and serve with marinara. You can use marinara or any choice of dipping sauce! Enjoy! :)
