Blackened Chicken Salad

Quick and delicious this salad is perfect for lunch or dinner and it's easy to put together! I love chicken and I eat a lot of it because it's easy to make and goes with a lot of things. Every once in a while I will go through a salad phase. I love wedge salads but one day I was in the mood for certain ingredients so I threw together this salad and it's been my go to for the last month. Obviously I don't only eat salads but when I want one this is what I make. I love how it's very simple, yet filling! I wanted to share because this salad is perfect for either lunch or dinner.

I love blackened chicken, adds more flavor and is simple! I make my own blackening seasoning using: Salt, Pepper, Garlic Salt, Garlic powder, Cayenne Pepper, Paprika, and Red Pepper. Mix it all together in a bowl, then I spray the chicken with a little butter and rub seasoning on it. I use olive oil and cook on medium heat in skillet. After the chicken is cooked I like to slice it before putting on top of my salad!

There are only 5 ingredients which are: any kind of lettuce, I like romaine. Cucumbers and tomatoes diced up, mozzarella cheese and any dressing but I use Ranch! That's it! Well topped with chicken that is 6 but super easy to make and delicious and filling!

My Makeup Favorites

I'd like to think I'm pretty simple when it comes to makeup. I don't wear a lot and I usually only take about 10 minutes max to apply my makeup. It's deciding which outfit to wear that takes the most.

I use Mary Kay makeup brushes and I love them! They work so well for me, are durable and are very soft!

I have a makeup palette that my cousin Maria actually left here from New York and she told me to keep it. Turns out it is the best and I love all the color selections it has! Sometimes I look down at all the colors and think "what color should I pick today" and then I always end up using the same color, usually anything neutral like the browns or light grays.

My foundation which currently is my favorite so far out of the many foundations I've tried. It's L'Oreal Paris True Match Lumi. I love how light it feels on my skin and it has SPF of 20 which I think most foundations do but living in Florida it's a definite must!

For mascara I use L'Oreal Paris as well and this too is my favorite. I've probably used this same brand of mascara for more than a year now. For me it does what I need it to do, doesn't clump and looks great!

I'm not big on wearing a lot of makeup, I keep it pretty simple for the most part. What are some of your makeup product favorites?

Date Night Outfit

Between work, spending time with the kids, wrestling practice/tournaments and family events, my babe and I try our best to incorporate time for just us. When you have lots going on like we do, you truly appreciate the time you spend together! We have a couple favorite spots that we love to go to when we can, otherwise we are completely content with spending the day at the beach or lounging around the house.

Since it's summer time, I want to be comfortable, feel beautiful and look classy! This cute outfit is perfect for date night!

At first I was so mad at myself for buying this shirt in a medium because they didn't have any smalls and I HAD to have it. Now I'm glad I did because I can either tuck this shirt in or let it flow. Either way it's super cute and I paired this shirt with black shorts from Love Culture. My heels are Guess and I LOVE them! They go with everything and are easy to walk in!

Some gold accessories: Michael Kors watch and gold chain bracelet from Express. Love MK :)

My boyfriend thinks this clutch is so ugly but I love it! You can use the chain with or no chain but I think this goes great with my outfit! Its from Aldo!

I am obsessed with leopard print! One of the reasons why I HAD to have this shirt! Love the pocket gives the shirt some pop of color/style :)

Great store! Sooo many cute shirts, shorts, dresses and more! You can check out their stuff here at Windsor Store ! :)

Summer Style//Crochet Shorts

Crochet shorts? What do you guys think? My boyfriend hates them. I love them. They go with so many tops, and can be casual or dressy! Super cute and comfortable, I'm loving the look. I paired mine with a quarter-length bright teal shirt and a pair of cute wedges!  Perfect for spring or summer time, I'm hoping this style sticks around for a while!

[Top and Shorts are both from Express]

This look is more of a casual, "out for the day" look. I'm wearing brown wedges but if you switch up your blouse and heels this could easily become a dressy style worn out to dinner for a date or girls night! :)

Summer Style//Crop Tops

Loving this sorta new summer style. Crop tops are super cute, they come in all kinds of styles, colors and patterns. Not to mention you can wear them with shorts, maxi skirts, or jeans! I'm definitely a fan and can't wait to incorporate them more into my summer wardrobe! These tops are not something I'd normally pick to wear and I am trying to break that boring style I have and change it up! I have sooo many clothes that I said "oh I'll wear that" and I never end up doing that! I'm so guilty of changing my outfit 10000X and I always end up playing it safe but I need to be more confident in my skin. No matter what people are always going to have something to say but my best advice is love yourself and the body you got! Wear what you want and be confident!

Beach Style

Summer time is finally here and lucky for me I live in Florida which means on my days off I'm hitting the beach! I got myself a new bathing suit from Victoria Secret and I plan on getting a couple more from some different places this summer. My sunglasses are Tory Burch and they are my favorite because they are polarized, they look so cute and go with every outfit! TKEE's  flip flops, these are one of my favorites because they come in all different kinds of colors and styles!

Usually when I hit the beach I just throw on a pair of shorts, shirt or tank top, doesn't really matter anyway because I spend the majority of the time in my bathing suit! :)

Here's to summertime!!!

Cauliflower Breasticks

We all have that one food that we want so bad when we are trying to eat healthy. For me it's pizza and breadsticks. More pizza but breadsticks are also delicious, plus they go great with pizza. It is so hard for me to avoid when I am doing my low carb diet, however, with using Cauliflower as a substitution for bread, it is possible to be able to indulge in the things I want but with sticking to my diet.

Here is the recipe that I use to make my breadsticks and pizzas:

Rice a whole head of cauliflower, either using a food processor or cheese grater. Food processor is MUCH easier. :)

Put riced cauliflower into bowl and put in microwave for about 8 minutes. Let cool in freezer or fridge for about 5-10 minutes. Then place into kitchen towel and squeeze out juice until the cauliflower looks more like dough. Should yield about 1 cup or less.

Place into a bowl with 1 Egg, 1 TBSP Olive Oil, 1/2 cup mozzarella cheese, 1 tsp salt and 1 tsp pepper, 1 TBSP of oregano and 1 tsp of garlic salt. 1 tsp of baking powder.

Mix together with your hands, then spread onto sheet pan. Be sure to oil up pan before putting "dough" onto it.

Bake for 15 minutes at 400 degrees. Check and see if done, add more time if need be. About 2 minutes before times up add some mozzarella cheese on top.

After baking and letting cauliflower breadsticks cool down, cut into squares or rectangles and serve with marinara. You can use marinara or any choice of dipping sauce! Enjoy! :)
